Some say that the Indian cuisine is almost as diverse as the entire European cuisine, because of the four different main regional styles: the North Indian cuisine (the regions Benaras, Kashmir, Mughlai, Punjab and Rajasthan), the South Indian cuisine (regions Andhra, Kannada, Kerala and Tamil), East Indian cuisine (regions Assamese and Bengali) and Western Indian cuisine (regions Gujarat, Maharashtrian and Malwani).   The National song of India is “Vande Mataram”. I was composed by Bankim Chandra Chatterjee in sanskrit. This song is equal in status with National Anthem “Jana – Gana – Mana”. This song was first sung in 1896 session of the Indian National Congress. Vande Mataram served as a voice against British rule during the freedom struggle. Terrified by the impending danger, British banned the expression of song and imprisoned freedom fighters, who disobeyed the command. Vande Mataram initially served as the National Anthem of India, but later Jana-gana-mana was adopted as the anthem of independent India. This was because the Muslim sect in India felt that the song was biased, as it depicted the nation as ‘Ma Durga’, a Hindu Goddess. Though Vande Mataram aptly illustrated the pre-independence national zeal and passion, it was espoused as the National Song of India. TAJ MAHAL

Taj Mahal, the pinnacle of Mughal architecture, was built by the Mughal emperor Shah Jahan (1628-1658), grandson of Akbar the great, in the memory of his queen Arjumand Bano Begum, entitled ‘Mumtaz Mahal’. Mumtaz Mahal was a niece of empress Nur Jahan and granddaughter of Mirza Ghias Beg I’timad-ud-Daula, wazir of emperor Jehangir. She was born in 1593 and died in 1631, during the birth of her fourteenth child at Burhanpur. Her mortal remains were temporarily buried in the Zainabad garden. Six months later, her body was transferred to Agra to be finally enshrined in the crypt of the main tomb of the Taj Mahal. The Taj Mahal is the mausoleum of both Mumtaz Mahal and Shah Jahan.http://infinitelinkz.com

The mausoleum is located on the right bank of the river Yamuna at a point where it takes a sharp turn and flows eastwards. Originally, the land where the Taj Mahal presently stands belonged to the Kachhwahas of Ajmer (Rajasthan). The land was acquired from them in lieu of four havelis as is testified by a court historian, Abdul Hamid Lahauri, in his work titled the Badshah-Namah and the firmans (royal decrees). For construction, a network of wells was laid along the river line to support the huge mausoleum buildings. Masons, stonecutters, inlayers, carvers, painters, calligraphers, dome-builders and other artisans were requisitioned from the whole of the empire and also from Central Asia and Iran. While bricks for internal constructions were locally prepared, white marble for external use in veneering work was obtained from Makrana in Rajasthan. Semi-precious stones for inlay ornamentation were brought from distant regions of India, Ceylon and Afghanistan. Red sandstone of different tints was requisitioned from the neighbouring quarries of Sikri, Dholpur, etc. It took 17 years for the monument complex to be completed in 1648.

In all, the Taj Mahal covers an area of 60 bighas, as the terrain gradually sloped from south to north, towards the river, in the form of descending terraces. At the southern point is the forecourt with the main gate in front and tombs of Akbarabadi Begum and Fatehpuri Begum, two other queens of Shah Jahan, on its south-east and south-west corners respectively called Saheli Burj 1 and 2.http://infinitelinkz.com

On the second terrace is a spacious square garden, with side pavilions. It is divided into four quarters by broad shallow canals of water, with wide walkways and cypress avenues on the sides. The water channels and fountains are fed by overhead water tanks. BULAND DARWAZA


BULAND DARWAZA – Fatehpur Sikri, Uttar Pradesh

 The monumental gateway facing south was built by Akbar as the main entrance to the mosque to commemorate his conquest over Deccan in 1601, according to the Persian inscriptions on the archway. Standing on the highest point of the ridge, it is 40.84 m high and was built on a platform that was 13.52 m high. INGREDIENTS REQUIRED :
  • 1 cup besan (bengal gram flour)
  • 1 cup fresh curds (dahi) mixed with 1 1/2 cups of
  • 2 to 3 drops of lemon juice
  • 2 tsp ginger-green chilli paste
  • 1/4 tsp turmeric powder (haldi)
  • a pinch of asafoetida (hing)
  • salt to taste
  • 3 1/4 tsp oil
  • 1 tsp mustard seeds ( rai / sarson)
  • 1/4 tsp asafoetida (hing)
  • 5 to 6 curry leaves (kadi patta)
  • 1/2 tsp finely chopped green chillies (optional)
For Garnishing :
HOW TO PREPARE:---

Sieve besan and keep in a bowl. Grind ginger and green chillies. Grease the reverse side of a few thalis or marble table top with a little oil. Make buttermilk with yogurt and half a cup of water. Mix the besan with ginger-green chilli paste, salt, turmeric powder, lemon juice and buttermilk, taking care that no lumps remain. Cook this mixture, stirring continuously, in a thick bottomed pan till it becomes a smooth thick batter. It takes a little time to get ready. Quickly spread portions of the mixture over the greased inverted thalis or marble table top as thinly as possible while the batter is still hot. When cool, cut into strips two inches wide and roll them tightly. Heat two tablespoons of oil and add a pinch of asafoetida and mustard seeds. When they splutter, pour over the pieces. Serve garnished with scraped coconut and chopped coriander leaves.  http://infinitelinkz.com
